Chili-Lime Skirt Steak Bowls

Serves: 4 Fresh / Salty / Sour / Spiced / Gluten-Friendly Option
Main Protein: Chili-Lime Skirt Steak
Ingredients:
1½ lbs skirt steak
Zest and juice of 2 limes
3 tbsp olive oil
2 garlic cloves, minced
1 tsp chili flakes or 1 small red chili, finely chopped
1 tbsp honey or agave
1 tsp smoked paprika
1½ tsp kosher salt
Black pepper to taste
Instructions:
Whisk marinade ingredients together.
Marinate steak 2–4 hours (overnight = max flavor).
Grill over high heat ~2–3 min per side for medium-rare.
Rest 5 min, then slice against the grain.
Base: Cilantro-Lime Rice or Quinoa
Ingredients:
1 cup dry rice or quinoa
2 cups water
Zest + juice of 1 lime
2 tbsp chopped cilantro
Salt to taste
Instructions:
Cook grain according to package directions.
Fluff, stir in lime and cilantro. Serve warm.

Grilled corn (cut from 2 ears)
Sliced avocado or guacamole
Pickled red onions
Cherry tomatoes or pico de gallo
Shredded cabbage or lettuce
Toasted pumpkin seeds or crispy shallots
Hot sauce or chipotle crema
Assembly
Scoop cilantro-lime base
Add sliced skirt steak
Top with veg & garnish
Finish with lime wedge and herbs
