Easy Pavlova (Metric/Grams Version)

Ingredients:

  • 120g egg whites (about 4 large egg whites)

  • 200g granulated sugar

  • 5g white vinegar or lemon juice (1 tsp)

  • 5g cornstarch (1 tsp)

  • 5g vanilla extract (1 tsp)

  • Optional: 250ml whipped cream + 300g fresh fruit for topping


Instructions:


  1. Preheat oven to 120°C (250°F). Line a baking sheet with parchment paper and draw a circle (18–20 cm) as a guide.

  2. Whip egg whites in a clean, dry bowl until soft peaks form.

  3. Add sugar slowly (1 tbsp at a time) while continuing to whip until stiff, glossy peaks form. This may take 7–10 minutes.

  4. Fold in vinegar, cornstarch, and vanilla gently using a spatula.

  5. Pile meringue onto your circle on the parchment. Shape into a round with higher sides and a slight well in the center.

  6. Bake for 60 minutes, then turn the oven off and allow to cool completely inside with the door closed (2 hours or overnight).

  7. Top with whipped cream and fresh fruit just before serving.

 

Using a stand mixer or a hand mixer, rather than a whisk, will allow for the sugar to be incorporated easiest.
